{recipe} sweet and savory breakfast for 2!

ok so i love cooking a ton
and ever since i've been a wife
{which we should all know has been a month now}
i've liked it even more.
i even have a recipe plan for the next 2 months!
and i think it would be cool to share my faves on this blog
(i've been wanting to do this for a long time)
it's just really fun to cook for someone who appleciates it
and just gobbles it right up!

so like 2 saturday mornings ago
jeffrey was gone and would be home at 10
so i decided to have a gourmet breakfast for him when he got home.

first i found this awesome, easy, delicious recipe for cinnamon bread.
mmmm.

ingredients: 
2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1 teaspoon of salt
1/4 cup oil 
2 eggs
1 cup buttermilk (can also use regular milk)
2 teaspoons vanilla
2 tablespoon cinnamon
2 teaspoons margarine

these are ingredients that most kitchens are constantly stocked with
which is quite convenient.
also, i halved the ingredients
since i only own one bread pan....haha

directions:
grease pan, preheat oven to 350
mix flour, sugar, baking powder, baking soda, 1 1/2 t cinnamon, salt, eggs, oil, buttermilk, vanilla 
in a large mixing bowl until it is chunk-less :)

in a small bowl, mis 2 tablespoons of white sugar with 1 teaspoon of cinnamon, and 1 teaspoon butter.

then put about 1/3 of the mixture in the pan.
after it is poured, sprinkle some of the cinnamon sugar  over it.
repeat twice until all of the mixture is  in the pan.
bake for about 50 minutes.
its very crumbly at first and is better to wait, 
but umm, i couldn't really wait, and it was delicious.
if you let it cool for 24 hours then it isn;t crumbly and is even more delicious!


mmm :) this stuff is seriously DELISH!

what is that?
well i just made a little cinnamon apple cider.
thought it would go well with the cinnamon bread.
and it did! i recommend it.
you just get apple juice and warm it in a pan until its the warmness you want.
sprinkle 1 teaspoon of cinnamon in it
and wa la!

ok, so that was the sweet. 
where is the savory you ask?
it'c coming don't worry.
SPINACH FRITTATA!
don't let the word spinach scare you- it is DELICIOUS!
recipe adapted from here

you will need:
handful or more of spinach
1/4 finely chopped onion (well, i like it finely chopped)
1 T butter
5 eggs (i used 3 regular eggs and 2 egg whites to make it fluffier)
1/2 C parmesan cheese
1 tsp. salt
1/4 tsp. pepper

first, you sauté onion and butter in saucepan, add spinach and mix together until a heavenly aroma is wafting and you can tell they are cooked.

then, whisk eggs in bowl, add cheese, salt, pepper.

pour in pan and add spinach/onion mixture.
pop in the oven at 375 for 30 minutes.

serves 2 (double or triple recipe if making it for more.)

i took it out after 25 minutes and sprinkled mozzarella cheese on it :)
i LOVE cheese. if you know me, you know that.
i didn't really get a pretty picture because it was devoured so quickly.
so i stole one from the website i got the recipe from
to make it look more appealing- it was seriously delicious!
